Ever been on a flight with a crew change? Flight attendants and pilots often "time out", meaning they've exceeded their duty period to work. If a crew member is scheduled, say, 14 hours and they go over by just one minute due to bad weather or a mechanical like gushing lavatory sludge, legally they must be pulled from the flight.
Sometimes, like in Bev's case here, it works out in the flight attendant's favor. In more realistic scenarios, crew are forced to stay on the trip and deal with their murderous passengers.
